Paleo Salisbury Steak & Sweet Potato Rounds
The consensus: looks like I might need a little more practice lol. The steaks looked great and everything but turns out I didn't cook some of them long enough (or made them too thick) and so half were good, the other were raw in the middle. Sorry, but I am not one of those people who can eat medium, or med rare.. it has to be well done for me or I get sick to my stomach. Yuck. So.. I decided to put them on the stove a little while longer and all I did was burn them.. it cooked it a little more inside but the outside got *really* black.
Also, I'm not a huge fan of sweet potatoes, but after looking at the recipe, it sounded like something I would actually like.. And they were good.. the ones I could get off the paper anyway.. I wasn't paying attention to what I pulled out of the drawer and got waxed paper instead of parchment paper. they were stuck like glue by the time it was done cooking. I'm usually pretty good at following a recipe.. unless it's something I really want to try.. then I fail miserably and then give up. I'm not though. Already have plans for my 2nd paleo meal tomorrow night. Hopefully it won't be as much of a disappointment.

You light up the sky
Last night a big part of West Texas was having a huge storm. We went thought it a couple of times coming back from Wichita Falls. We saw things in the road like parts of metal roofs and the side railing on roadways out in the middle of the interstate. Plus a huge wall of red dirt in the air making it nearly impossible to see anything and making us pull over more than once.We got to Midland in time to see an awesome lightening storm (couldn't hear any thunder). Some of these are stills from a video I took. I'm going to crop the video down because it was pretty long. There was a set of lightening (I'm not sure if that's a correct name but that's what I'm calling it) that had to recharge every 3-4 minutes and when it did it lit up the whole sky. At one point it looked like it was coming from the ground up.
Amarillo to Ft. Stockton is about 352 miles.. then the smaller storm at the bottom is another 80-90 miles. And apparently I didn't look far enough north on that doppler because the storm included Some of Oklahoma too.

We Have a Graduate!
Saturday we attended Permian High School's Class of 2013 graduation to watch Dani walk across the stage.
Attending this graduation really made Mac and I look at how old we really are lol.. Well, not me completely, since I'm just barely turning 30 this year but the fact that 11 short years ago, I met this snaggletooth little 6 year old who has transformed wonderfully into a smart, beautiful young woman made me want to break down and cry.Not sure what her plans are for the summer besides work and partying (lol) but come September we will be seeing her off to Texas State University in San Marcos and that is making me even more sad just thinking about it. Unfortunately my camera decided to malfunction as soon as she received her diploma but I got her walking up and walking away.
